Spaghetti Squash Pancakes

It's been a long time... busy busy
here is a recipe for Spaghetti Squash Pancakes with Smoked Salmon Yogurt

For the Squash
1. Bake the squash at 180C for 40 minutes (or until tender)
2. Leave the squash to cool then cut in half and remove the seeds
3. Take a fork and break apart the inside (it really looks like spaghetti)
4. In a large bowl combine the squash with some flower and a pinch of salt (you should be able to make little balls of the spaghetti squash)
5. Heat a skillet and add butter
6. Place a small ball of the spaghetti squash mixture and flatten out
7. Cook on both sides

For the Smoked Salmon Yogurt
1. To a cup of plain unflavoured yogurt (or sower cream) add the smoked salmon chopped up in bitts, a teaspoon of lime juice and some fresh cilantro
2. Let the yogurt sit in the refrigerator for a few hours

Once the pancakes are done add the salmon yogurt and they are ready to eat!!!
